The ORIGAMI Harmony Cup was developed in collaboration with Ryan Wibawa, Indonesia’s Brewers Champion in 2016 and 2024, who also represented his country and placed third in the 2024 World Brewers Cup (WBrC). His simple yet thought-provoking question  “Is it possible to create a cup that focuses particularly on aroma?”  became the inspiration behind its creation.

The Harmony Cup was designed to follow the growing trend in specialty coffee of uniting aroma and flavor. It was crafted to allow the subtle and layered characteristics of coffee to be fully experienced. Every sip is meant to reveal the richness and delicacy of carefully brewed coffee.

Shape that Enhances Aroma

The shape of the Harmony Cup draws from ORIGAMI’s Aroma Series. It is designed to capture the fragrance of coffee and release it gently as you lift the cup. The complex and fruity aromas of specialty coffee fill the senses before the first sip. Rim Shape that Smooths the Flow of Coffee

The rim of the Harmony Cup has a gentle, spreading angle. This allows the coffee to flow naturally across the tongue. The shape guides the liquid evenly, so the flavors touch every part of the mouth. The tip, center, sides, and back of the tongue all experience the coffee in balance. Each sip reveals the sweetness, body, and depth of the coffee. A COMPLETE FIT - ELIMINATING BYPASS

The air flow between the filter and the brewer is eliminated by the flat paper’s adhesion to the dripper walls when wet, thereby removing the “bypass” that can cause astringency in the cup.

The FLAT is very sensitive to dripper geometries and properties since once it is wet, the filter stitches to the dripper walls, eliminating the bypass effect and the air circulation through the filter. This makes it possible to obtain different flow rates depending on the dripper used, opening a new world of possibilities for the barista to experiment with and select the dripper depending on the target extraction time.

A CLEAN SILHOUETTE - NO WAVES

The filter CONE FAST eliminates the air gaps created between the waves of classic flat bed filter which ones produce the bypass effect, the FLAT FAST eliminates any air circulation between the filter and the dripper. The FAST Specialty Coffee paper provide enough permeability to provide a fast and excellent flow rate without these extra air channels. As a result of the aluminum metal used, the Graycano dripper is able to quickly reach the target temprature and maintaining it throughout the brewing process.  The graycano is coated with high technology coating - a  food safe and scratch resistant material and promotes a clean taste and does not interfere with the flavor of your coffee. UFO Variable Wall Thickness Technology, and the reason behind the decision to not include base (holder).

Ceramic UFO is an attempt at stabilizing coffee slurry temperature throughout brewing. Via reducing unnecessary thermal mass from the upper levels of the dripper construction and positioning the dripper as close as possible to the heat retained within the carafe by removing the base, the ceramic UFO is able to create a brewing process that draws from a more stable incubated heat from below the brewer throughout the brewing process. 

Ceramic UFO’s uppermost wall thickness is 23.7% thinner than the lowermost wall thickness, removing unnecessary thermal mass.

Ceramic UFO is designed to sit directly on the server, which allows the hot heat from the output coffee inside the server to circulate upwards, constantly providing an additional source of heat towards the thickest part of the dripper for better thermal stability.

This would be an issue in traditional protruding-rib designs where airflow is heavily dependent on the separation of the dripper base and server via base risers, but with UFO’s air channels that provide constant and consistent air flow from behind the filter, fear of clogging (stalling) via air-lock is fully out of question.

The science behind the Graycano Special Edition Filter:

The graycano special edition is a redesigned SIBARIST CONE S FAST Specialty Coffee Filter. Its angle was adjust to fit the internal conical walls of the graycano dripper, which has a different angle as other conical drippers (for instance the V60).

With just a slight angle difference of -2,75o on the filter shape (once folded), the new filter fits perfectly over the graycano Lava Ribs. This prevents unwanted and random filter positioning, like tilted sitting or uneven contact with conical walls.The most common causes of uneven brewing are uneven extractions and inconsistent consistency. This adjustment brings the filter to a perfect fit for high consistency in extraction and flowrate.

Each time when the paper filter sits differently inside the graycano dripper, it disrupts these circulations by either detaining or enhancing air and water flow. Even if no factor was changed intentionally, an extraction recipe can have different results. 

Using the special edition filter inside the graycano dripper ensures consistency in coffee extraction. In this way, air and water circulation between the filter and dripper are greatly improved.

This graycano Special Edition filter extracted in a slightly slower drawdown, but with a much smaller variation in time: 3 seconds. The CONE S had a drawdown time difference of 7 seconds

As a result of the wider angle of the regular CONE S, there are more air gaps in certain places depending on where the filter is placed.

The time difference and dispersion might increase under normal brewing conditions and with different pours.

A graycano Special Edition Coffee Filter is made from the same material and structure as the FAST Specialty Coffee Filter, which gives the paper rigidity to maintain its conical structure during brewing. Furthermore, this combo ensures faster extraction times.

In addition, the new graycano Special Edition filter has an adjusted height. The dripper body has no overpass, which allows the barista to pour much closer to the coffee bed. This allows for a more controlled and balanced flow of water during extraction. Aside from improving the efficiency of your brew recipe, this also enhances the combination's visual appeal.
