A slow-flow conical filter that extends contact time through the paper, for light roasts and recipes that need more extraction without a finer grind
Light roasts are dense and slow to give up their solubles, and a fast drawdown can leave a cup that tastes thin or sharply sour. The usual fix is to grind finer, but past a certain point that adds fines to the bed, raises the risk of channeling, and makes the end of the drawdown harder to predict.
The Sibarist RARITIES SLOW Cone Filter is a medium conical paper filter for 02-size, 1 to 4 cup drippers, made in Spain by Sibarist. Its paper adds flow resistance, so the drawdown runs longer and the coffee spends more time in contact with the water while your grind setting stays where the cup tastes best.
How the SLOW Paper Shapes Extraction
Sibarist is best known for its FAST filters. Sibarist rates the paper in its FAST Cone M, which Slow Pour Supply carries, at a drawdown 15 to 40% faster than other filters, which lets brewers push to finer grinds without choking the bed. SLOW takes the opposite approach. It increases flow resistance, and Sibarist designed it for a longer drawdown and a high level of cup cleanliness.
Flow resistance changes where contact time comes from. On a fast paper, total brew time depends mostly on grind size, pour rate, and agitation. On SLOW, the paper holds water in the cone longer, so you can run a medium or medium-coarse grind and still reach the extraction yield a light roast needs. A coarser grind also sends fewer fines toward the filter, which helps the drawdown stay even through the final pulse.
Sibarist points to two uses in particular: bringing more flavor out of light-roast profiles, and a different way of extracting highly fermented coffees. With heavily processed lots, the slower paper gives you one more variable to work with alongside grind, water temperature, and pour structure, so grind size does not have to do all the work.
SLOW is part of RARITIES, Sibarist's limited collection of specialty coffee filters with properties outside its core range.

Brewing with the SLOW Cone
Fold the side seam, seat the filter in the cone, and rinse with hot water to preheat the dripper and server. Because the paper adds resistance, start a step or two coarser than your usual setting on a fast filter, then dial in by total brew time and taste.
If the drawdown runs long and the cup tastes dry or bitter, open the grind. If it tastes thin or sour, tighten the grind, or extend the bloom and add a pulse pour to raise extraction. Keep the dose, ratio, and pour schedule fixed while you adjust, so the change in drawdown time is easy to read.
The Rareties SLOW Paper
• Increased flow resistance: Slows the drawdown and extends contact time, so extraction can rise without grinding finer.
• Cup cleanliness: Sibarist designed the paper for a clean cup with high clarity.
• Medium cone shape: Sized for 02 conical drippers and brews of 1 to 4 cups.
Compatible Conical Drippers

The selection of materials and Sibarist's manufacturing process are focused on achieving the highest possible quality over any other factor, while always respecting process sustainability.
The FAST line is composed of a mixture of abaca fiber from plantations in Ecuador and the Philippines (where the product consumed is replanted every year to then be harvested, offering a sustainable process, with batch control and chain of custody), cellulose fiber from European pine plantations (FSC and PEFC) and organic plant-based (non-fossil) polylactic acid.
The main component, abaca fiber, is finer and more porous than other fibers, giving FAST paper good permeability (leading to a higher extraction speed), while offering great tensile and tearing strength in wet conditions, bringing structure and resistance to the composition, with a low substance (less paper). Additionally, the fibers are pulp made from non-wood fibers. This facilitates clean in-plant processing, essential for eliminating the presence of external flavors in the cup and for offering a high-quality filter, while it can also be processed in a more sustainable way.
“This is a product with a history similar to that of a coffee bean. Its whole process is reflected in the cup, in the form of possibilities, irregularities, aromas and flavors. We must measure up.”
