Sibarist's highest-permeability conical filter in their lineup, for running finer grinds and higher extraction while the drawdown keeps moving

Grinding finer is the most direct way to raise extraction in a pour over. More surface area gives up solubles faster, but it also packs the bed tighter, and on a standard paper the brew can slow sharply or stall before the last pour has drained.

The Sibarist RARITIES HP Cone Filter is a medium conical paper filter for 02-size, 1 to 4 cup drippers. HP stands for High Permeability, and it is the most permeable filter Sibarist has made to date. It lets water leave the cone faster, so you can run finer grind settings and keep total brew time where your recipe needs it.

How the HP Paper Changes the Drawdown

In a percolation brew, the filter is one of the resistances that sets flow rate, along with grind size, bed depth, and fines. When the paper restricts less, more of the brew time is controlled by the coffee bed itself, and grind size becomes the main variable you are working with.

Sibarist built its reputation on permeable papers. The FAST Cone M is rated by Sibarist at a drawdown 15 to 40% faster than other filters. HP goes further than FAST, and Sibarist describes it as allowing faster flow and finer grinds, with distinctive flavors and cup profiles as the result.

In practice, HP opens up recipes that would choke a slower paper: a fine grind with large, agitating pours, or a high-extraction recipe for a dense light roast where you want to push extraction yield without running past your target brew time. It sits at the opposite end of the RARITIES collection from the RARITIES SLOW Cone Filter, which adds flow resistance instead.

Brewing with the HP Cone

Fold the side seam, seat the filter in the cone, and rinse with hot water to preheat the dripper and server. Because the paper drains faster than most filters, start a step or two finer than your usual setting and dial in by total brew time and taste.

If the cup tastes thin or sour and the drawdown finishes early, grind finer or add a pulse pour. If it turns bitter or astringent, open the grind or reduce agitation, since a finer grind extracts quickly once contact time is long enough. Keep the dose, ratio, and pour schedule fixed while you adjust, so the change is easy to read.

The HP Paper

•       High permeability: Sibarist's most permeable filter to date, for a faster flow than its FAST paper.

•       Finer grind range: Lets you grind finer without the drawdown stalling, so extraction can rise within the same brew time.

•       Medium cone shape: Sized for 02 conical drippers and brews of 1 to 4 cups.

Compatible Conical Drippers

•       Hario V60 02: 60° cone, medium size, 1 to 4 cups.

•       ORIGAMI Dripper M: Medium ORIGAMI dripper, used with the cone filter in place of a wave filter.

•       CAFEC Flower Dripper Cup 4: Medium-size cone, 1 to 4 cups.

•       SD-1R: Medium-size cone, 1 to 4 cups.

•       DragonFly Concial Brewer 390ml: Medium-size cone, 1 to 4 cups.

The selection of materials and Sibarist's manufacturing process are focused on achieving the highest possible quality over any other factor, while always respecting process sustainability.

The FAST line is composed of a mixture of abaca fiber from plantations in Ecuador and the Philippines (where the product consumed is replanted every year to then be harvested, offering a sustainable process, with batch control and chain of custody), cellulose fiber from European pine plantations (FSC and PEFC) and organic plant-based (non-fossil) polylactic acid.

The main component, abaca fiber, is finer and more porous than other fibers, giving FAST paper good permeability (leading to a higher extraction speed), while offering great tensile and tearing strength in wet conditions, bringing structure and resistance to the composition, with a low substance (less paper). Additionally, the fibers are pulp made from non-wood fibers. This facilitates clean in-plant processing, essential for eliminating the presence of external flavors in the cup and for offering a high-quality filter, while it can also be processed in a more sustainable way.

“This is a product with a history similar to that of a coffee bean. Its whole process is reflected in the cup, in the form of possibilities, irregularities, aromas and flavors. We must measure up.”
