Heat releases aroma volatile compounds into the air around your brew rather than into the liquid you’re drinking. It’s a quiet, consistent loss, and one the Paragon was designed to address. Sitting beneath your pour over dripper, it chills the brew as it falls through the Paragon Chilling Rock, intercepting the extraction at the exact moment volatile compounds are most vulnerable. Brewing With Intention, Down to the Physics
Nucleus Coffee Tools developed the Paragon in collaboration with the Zurich University of Applied Sciences (ZHAW), one of Europe’s leading applied science institutions and home to the Coffee Excellence Centre. Their research team studied the direct relationship between brew temperature and volatile aroma compound preservation, measuring real sensory outcomes in the cup under controlled conditions. That research shaped every design decision in the Nucleus Paragon: the geometry of the chilling rock, the thermal properties of its core, the position of the stand.
The result, as confirmed by ZHAW’s research, is up to 40% more aroma volatile compounds preserved compared to an identical pour over brew made without extract chilling. Flavor you taste, not lose to the room.
The Stand
Three adjustable tiers, each with a clear purpose.
The top tier of the Nucleus Paragon Pourover Stand holds your single-server pour over brewer of choice. It is compatible with conical drippers including the Origami Dripper and Suprima Instrument SD-1R, as well as flat bottom brewers like the Solo Dripper and April Brewer. The middle tier cradles the Paragon Chilling Rock, positioned precisely in the brew path where the extract chilling process takes place. The bottom tier holds your server, catching every drop.
All three tiers are fully adjustable to accommodate different pour over brewing equipment and server sizes. The Paragon Pourover Stand is also compatible with most pour over brewing scales, sitting flush on the base without obstruction.

The Chilling Rock
The Paragon Chilling Rock is the core of the extract chilling system. Designed by Nucleus Coffee Tools in collaboration with industrial designers, every dimension of the rock serves the brew.
