HOW TO FIND THE RIGHT SIZE FOR YOUR ESPRESSO PORTAFILTER?
The SIBARIST ESPRESSO filters have a different diameter than your portafilter. The filter diameter aligns with the inner bottom basket diameter. To determine the correct filter size for your basket, you should measure the inner bottom diameter of your basket using a vernier caliper. This measurement corresponds to the filter size that will be compatible with your basket.If you don't have the means to measure this diameter, you can use the printable template to find the right filter. Print the template and cut out the circles, then place them inside your portafilter basket. The circle that fits best within the basket (occupying the least space) corresponds to the filter diameter you need. The number in the center of the selected circle indicates the filter diameter in millimeters. Ensure that you print the document at a 1:1 scale (100%) to ensure the template size matches the actual size accurately.

The selection of materials and Sibarist's manufacturing process are focused on achieving the highest possible quality over any other factor, while always respecting process sustainability.
The FAST line is composed of a mixture of abaca fiber from plantations in Ecuador and the Philippines (where the product consumed is replanted every year to then be harvested, offering a sustainable process, with batch control and chain of custody), cellulose fiber from European pine plantations (FSC and PEFC) and organic plant-based (non-fossil) polylactic acid.
The main component, abaca fiber, is finer and more porous than other fibers, giving FAST paper good permeability (leading to a higher extraction speed), while offering great tensile and tearing strength in wet conditions, bringing structure and resistance to the composition, with a low substance (less paper). Additionally, the fibers are pulp made from non-wood fibers. This facilitates clean in-plant processing, essential for eliminating the presence of external flavors in the cup and for offering a high-quality filter, while it can also be processed in a more sustainable way.

We recommend using soap and warm water and focus on cleaning the interior of the milk pitcher after every shift. Milk contains fat, proteins, and sugars that can leave residue on surfaces, especially if only rinsed with water. Over time, this residue can harden and become more difficult to clean.
As milk spoils, lactose is fermented into lactic acid, increasing the acidity. Acids can slowly corrode metal, even stainless steel, though stainless steel is more resistant. Prolonged exposure to acidic substances can wear down the protective layer of stainless steel.
Using soap and warm water is standard for removing milk fats and proteins effectively. Soap helps break down the fat molecules that water alone cannot remove, preventing buildup.
After wash, we recommend you to dry it with towel and leave them right side up to air out. Drying is important because water left on the surface of stainless steel can cause water spots and possibly encourage corrosion in the long term. Proper drying extends the longevity of metal kitchenware.

POMA values innovation in processing methods, but we also believe in allowing the true essence of coffee to shine through without fermentation. That's why they have developed a unique processing method called the 'Cold Washed Process.' This method respects the tradition of the washed process while embracing innovation.
The Cold Washed Process is designed to preserve and enhance the natural qualities of coffee while minimizing external influence. This method involves chilling coffee cherries for 48 hours at 8°C to intensify aromas without inducing fermentation, followed by low-temperature washing and drying in a pressurized tumble dryer.
The absence of fermentation prevents microbial activity and oxidation that can degrade aroma compounds. While fermentation can add complexity and acidity, the Cold Washed Process emphasizes the coffee’s genetically inherent flavors, leading to a clean, crisp cup with heightened sweetness, characterized by fruity esters and floral terpenes.

Volcán Azul, managed by Alejo Castro Kahle, is situated on the fertile volcanic slopes of the Poás Volcano in Central Valley at altitudes ranging from 1400-1900 masl., complemented by a state-of-the-art mill. Alejo and his team are dedicated to maintaining and improving coffee quality, honouring their family’s long legacy of outstanding coffee for several generations.
Their willingness to innovate and develop has been essential to our collaborative efforts, which has seen us initiate a lot of experimentation on their farm for the coming years, which we are excited to share with all of you.
In this cold washed lot of the Gesha variety from Volcán Azul in Costa Rica, expect an intensification of all of those inherent and characteristic aromas of the variety. A coffee bursting with distinct aromas of jasmine flower, elderflower cordial and peach, accompanied by a coating mouthfeel and lingering sweet aftertaste as a result of an innovative processing approach.

Based in Copenhagen, POMA coffee centers itself in the projects of refining coffee production techniques, address industry challenges, and bridge the gap between research and practical application through research. POMA collaborates closely with coffee farmers to implement and scale up their findings, aiming to make sustainable practices more accessible and effective.
The genetic blueprint of each coffee variety significantly influences the formation of volatile organic compounds (VOCs) and the composition of essential elements such as sugars, acids, and oils. These components play a crucial role in developing the complex aromas and flavors that distinguish one coffee from another.

We recommend using soap and warm water and focus on cleaning the interior of the milk pitcher after every shift. Milk contains fat, proteins, and sugars that can leave residue on surfaces, especially if only rinsed with water. Over time, this residue can harden and become more difficult to clean.
As milk spoils, lactose is fermented into lactic acid, increasing the acidity. Acids can slowly corrode metal, even stainless steel, though stainless steel is more resistant. Prolonged exposure to acidic substances can wear down the protective layer of stainless steel.

SD1R Basic Starting Recipe
The SD1R is made for brewing enthusiasts: those who love to experiment with different styles, methods, and variables.
It works on the same semi-immersion principle as the SD1, but with a smaller form and a faster flow rate.
The SD1R performs best with 9–15g of coffee, though my personal sweet spot is 13–14g of coffee to 210ml of water.
Because of its faster drawdown, both three-pour and four-pour methods work beautifully with the SD1R.

The SD-1 Coffee Dripper is engineered around three core principles: consistency, repeatability, and durability. By addressing common challenges found in conventional drippers such as unstable flow, inconsistent extractions, and material wear—the SD-1 offers a more reliable and precisely controlled manual brewing experience.
At its core, the SD-1 utilizes a hybrid brewing method: immersion and percolation. This simultaneous integration of two traditionally separate extraction processes creates a unique flavor profile, balancing body and clarity while providing enhanced control over brewing variables.
The defining feature of the SD-1 is its controlled channeling design, which regulates water flow through the coffee bed with exceptional precision. Unlike conventional drippers that often allow uneven channel formation, the SD-1’s geometry actively directs water to improve saturation, optimize extraction yield, and minimize the risk of under- or over-extraction.

SD1 Basic Starting Recipe by Hiro Lesmana
The SD1 dripper is designed to brew one large cup or two sharing cups.
My ideal starting recipe is either:
18g coffee to 250ml water, or
22g coffee to 300ml water
You might notice that this ratio is a bit dense and that’s intentional. The SD1 works on a semi-immersion method, meaning the extraction rate is slower than your usual percolation dripper. Because of that, a standard 1:15 or 1:16 ratio won’t necessarily yield the best result. Not that it’s wrong - I just personally prefer it this way.
Option 1 : For a Lighter, More Delicate Cup
If you enjoy coffee that’s lighter, elegant, and delicate, a two-pour style works beautifully.
First pour (bloom):
50ml of water for the 18:250 ratio, or
75ml of water for the 22:300 ratio.
Pour evenly, ensuring all grounds are saturated.
Bloom time: Let it sit for at least 1 minute 30 seconds (1:30).
For fresher coffee (1–2 weeks after roast), you can extend the bloom to 2 minutes.
Second pour: Pour the rest of the water in one go, then simply wait for it to draw down.
Yes, a longer bloom is perfectly fine— as long as the coffee tastes great!
For a Balanced, Classic Strength Cup
If you prefer a more traditional strength, try a three-pour style.
First pour (bloom):
50ml (for 18:250) or 75ml (for 22:300).
Let it sit for 40 seconds to 1 minute, depending on coffee freshness.
Second & third pours:
Divide the remaining water into two equal pours.
Each pour should start when the water level is just above the coffee bed.
Example:
If you’re brewing 18g to 250ml, after blooming you’ll have 200ml left.
At around 0:41, pour the first 100ml.
Around 2:00, when the water level drops close to the bed, pour the final 100ml, and let it draw down.
A Note on Drawdown Time
Brewing with the SD1 takes longer than with most percolation drippers and that’s by design. The waiting might test your patience, but as the saying goes, good things take time. I promise the result is worth it.
If the drawdown feels excessively slow and the coffee bed looks muddy, your grind size is too fine.
I intentionally don’t specify grind size or water temperature here — these variables depend on your grinder, coffee, and water composition. Use this recipe as a starting point, and adjust to taste.
