About the Collaboration
The Small Blankenburg name comes from a collaboration between Slow Pour Supply and Kay Cheon, the 2025 US Barista Champion. When Kay approached Slow Pour with an idea for a pitcher built around barista competition needs, the team worked with WPM, a leading global pitcher manufacturer, to develop a matte white finish designed to resist the fingerprints and milk stains that can cost points on the competition stage.
The name itself is a tribute rather than a technical label. It honors Mark Blankenburg, the milk delivery driver for Dune Coffee Roasters, recognizing the people behind the scenes who support the coffee industry. The Model #27 carries that name and finish in the 10oz narrow spout format, sized for small format drinks rather than the larger service pours the Blankenburg line also covers.

When United States Baristas Competition competitor Kay Cheon reached out to Slow Pour with an idea to create a pitcher for barista competitions, Anita, our owner and U.S.B.C. Often these are the criteria used to judge a "clean pitcher," and frequently just a slight fingerprint or small milk drip on the side of the pitcher will cost the competitor points.

Hey Kay, tell us a bit about the story behind the name for the pitcher!
Mark Blankenburg, our dairy deliveryman, is one of the first people we see in the morning. Despite having to get up far earlier than most people, Mark is always friendly and kind. (He also looks out for us, particularly if we don’t place an order on time!) The first year I competed in a barista competition, I knew I wanted to use the milk we use in our café (Straus) in Seattle for the competition, and Mark offered to get us the freshest possible milk available before we flew out with it in a cooler. Ever since then, he has always gone above and beyond to help us and takes an interest in all the Dune competitors (and he still always brings us the freshest milk).
I often think about how we emphasize the work of producers in the coffee supply chain, but we also rely on people like Mark to make coffee service possible.

We recommend using soap and warm water and focus on cleaning the interior of the milk pitcher after every shift. Milk contains fat, proteins, and sugars that can leave residue on surfaces, especially if only rinsed with water. Over time, this residue can harden and become more difficult to clean.
As milk spoils, lactose is fermented into lactic acid, increasing the acidity. Acids can slowly corrode metal, even stainless steel, though stainless steel is more resistant. Prolonged exposure to acidic substances can wear down the protective layer of stainless steel.
Using soap and warm water is standard for removing milk fats and proteins effectively. Soap helps break down the fat molecules that water alone cannot remove, preventing buildup.
After wash, we recommend you to dry it with towel and leave them right side up to air out. Drying is important because water left on the surface of stainless steel can cause water spots and possibly encourage corrosion in the long term. Proper drying extends the longevity of metal kitchenware.

Matching that profile consistently depends on the water it's brewed with, which is what led to this collaboration with APAX LAB, a lab focused on precision water design for coffee.
The result is a concentrate developed specifically to match Terres de Café's coffees: engineered to reveal brightness, lift sweetness, and support a coating texture, so each coffee can express its full aromatic range. This profile was created with MOK Coffee, a specialty roaster based in Brussels known for expressive light roasts and clean, precise flavor profiles. APAX LAB worked directly with MOK to build a mineral composition suited to the roasts MOK is known for: coffees where clarity and origin expression matter more than heavy body or roast character.
The goal was balance. Light roasts can taste thin or sharp when the water chemistry isn't dialed in, and they can taste flat when it's ignored altogether. This concentrate is formulated to sit in between, adding lift and structure without masking what the coffee already does well.
Shake the bottle thoroughly before use. Add 3 to 4g/L of mineral concentrate directly into your brew water, or add 1 to 10 drops directly into a 200mL cup of coffee, adjusting to taste. For the most control over remineralization, use demineralized water as your base.

Lucid [2.1] is a mineral concentrate designed to work with a clean, expressive, bright roasting style, sharpening the aromatics and the finish rather than covering them up.
Lucid [2.1] was co-created with APAX LAB, an Australian company that designs high-precision mineral concentrates for coffee. Their work centers on isolating the mineral ratios that shape how aroma and acidity present in the cup, then concentrating them into a form that's simple to dose and easy to repeat.
Paired with TANAT's roasting approach, Lucid [2.1] was tuned to bring out what a bright, expressive light roast is built to show: clearer aromatics, elevated brightness, and a more refined finish. The result is a cup that reads as clean and precise, without asking the brewer to change anything else about how they already brew.
