MK Ceramics Studio, is a passionate ceramic studio synonymous with high quality handmade pottery. They create limited edition, unique, handcrafted porcelain pieces designed to enhance daily rituals, whether you’re enjoying a quiet cup of coffee or setting the table in a busy restaurant.

This project is a joint limited edition collaboration between MK Studio, UFO and Slow Pour Supply.

Used by Wataru Iidaka in his runner-up performance at the 2024 World Brewers Cup in Chicago, the UFO is designed around a single pursuit: the cup clarity and acidity characteristic of conical brewers, delivered with flat-bottom-level consistency.

Geometry

Conventional conical drippers produce complex, acidic cup profiles but are sensitive to dose variation and prone to inconsistency. The UFO addresses this through an unprecedented 80° interior angle, shallower than any comparable conical on the market. The wider angle slows flow rate to maintain controlled contact time, reduces bed depth variation across different dose sizes, and encourages fines accumulation above the bed rather than throughout it. The result is a conical that is more forgiving to technique variation without sacrificing the cup characteristics that make the format compelling.

Air Channel Technology

Rather than protruding ribs, the UFO integrates recessed air channels that work in tandem with the Disperser tool for precise filter placement and repeatable bypass control. The channels simultaneously equalize air pressure above and below the carafe, eliminating stall risk during the brew cycle.

UFO Variable Wall Thickness Technology, and the reason behind the decision to not include base (holder).

Ceramic UFO is an attempt at stabilizing coffee slurry temperature throughout brewing. Via reducing unnecessary thermal mass from the upper levels of the dripper construction and positioning the dripper as close as possible to the heat retained within the carafe by removing the base, the ceramic UFO is able to create a brewing process that draws from a more stable incubated heat from below the brewer throughout the brewing process. 

Ceramic UFO’s uppermost wall thickness is 23.7% thinner than the lowermost wall thickness, removing unnecessary thermal mass.

Ceramic UFO is designed to sit directly on the server, which allows the hot heat from the output coffee inside the server to circulate upwards, constantly providing an additional source of heat towards the thickest part of the dripper for better thermal stability.

This would be an issue in traditional protruding-rib designs where airflow is heavily dependent on the separation of the dripper base and server via base risers, but with UFO’s air channels that provide constant and consistent air flow from behind the filter, fear of clogging (stalling) via air-lock is fully out of question.

An unprecedented 80º interior angle

The team at UFO Dripper aimed at creating the cup profiles they love from conicals brewers. They have found that the 80º interior angle of this brewer design slows down the brew to maintain a respectable contact time even with the air channels, and means that it's less sensitive to smaller doses. This is because the shallower the brewer walls, the less the bed depth changes with varying doses. The angle also contributes to greater accumulation of fines above the bed, further increasing clarity.

Air Channel Technology

UFO incorporates air channels instead of protruding ribs, which combined with the Disputer tool allows for the perfect filter set and consistent bypass. The air channels also contribute to equalizing the air pressure above and below the carafe, mitigating any risk of stalling.  

Thermal Stability

The UFO team conducted extensive thermal testing, leading them to the current single-walled, solid Tritan design for the injection-molded V2. The Tritan material maintains superior thermal stability in the slurry, while also being extremely resistant to warping at boiling temperatures.

The UFO dripper is a Jay and Kenzie development, they based all the R&D to create the UFO around the Sibarist filters due the performs consistently every single time. The UFO special edition goal is to share the utmost consistent brewing experience with the brewing community.

UFO: “We wanted to create a conical dripper that can not only capture clarity and complexity, which are characteristics of a traditional 60-degree wall angle conical dripper but also sweetness and even extraction of a flat bottom dripper, leading to cups with incredible clarity and intensity. Once we achieved that through UFO’s unique 80-degree wall angle, our next mission was to solve the consistency issue of a conical dripper. That’s when we designed our UFO air channels alongside UFO blocks that the filters sit on with enough surface tension to not collapse into the air channels. The result is something truly special, a cup profile that has never existed before. One that combines the best of the flat bottom and the conical geometry. • The B3 Specialty Coffee Filters (The filter is delivered unfolded, se HOW TO USE below)

“B3 flows slower than FAST. We enjoy B3 for fast flowing process impact-heavy (natural/anaerobic natural/carbonic maceration/co-ferment/yeast-inoculated, etc) coffees that require coarser grind sizes and a slower flow rate to provide sufficient contact time to extract all the good things while avoiding over extraction of the mega funky flavours that can often be overwhelming. This can also apply in roast levels. The more developed the roast, the more we will lean towards the B3 and grind even coarser.”
