The UFO Special editions are the filters that perform the maximum potential, yield and fitting of the UFO dripper.
The UFO B3 Flat works for UFO V2. For V3, please use the UFO Type F filters.
The filters ensure the no bypass but let extraction be driven through the UFO original air channels design, achieving an special and stunning cup profile.
The UFO dripper is a Jay and Kenzie development, they based all the R&D to create the UFO around the Sibarist filters due the performs consistently every single time. The UFO special edition goal is to share the utmost consistent brewing experience with the brewing community.
UFO: “We wanted to create a conical dripper that can not only capture clarity and complexity, which are characteristics of a traditional 60-degree wall angle conical dripper but also sweetness and even extraction of a flat bottom dripper, leading to cups with incredible clarity and intensity. Once we achieved that through UFO’s unique 80-degree wall angle, our next mission was to solve the consistency issue of a conical dripper. That’s when we designed our UFO air channels alongside UFO blocks that the filters sit on with enough surface tension to not collapse into the air channels. The result is something truly special, a cup profile that has never existed before. One that combines the best of the flat bottom and the conical geometry. We cannot wait for you all to experience it soon.”
There are two filter paper technologies available for the UFO dripper:
- The B3 Specialty Coffee Filters (The filter is delivered unfolded, se HOW TO USE below)
“B3 flows slower than FAST. We enjoy B3 for fast flowing process impact-heavy (natural/anaerobic natural/carbonic maceration/co-ferment/yeast-inoculated, etc) coffees that require coarser grind sizes and a slower flow rate to provide sufficient contact time to extract all the good things while avoiding over extraction of the mega funky flavours that can often be overwhelming. This can also apply in roast levels. The more developed the roast, the more we will lean towards the B3 and grind even coarser.”
Using Sibarist Flat Papers
UFO was designed for use with Sibarist Fast flat and B3 papers, although this template can be used to fold any flat filter. Simply fold once in half, then fold to match the angle below (feel free to take a screenshot and print this diagram).

OREA FLAT 2. The Next Evolution in Zero Bypass Brewing
The OREA FLAT 2 carries the original SIBARIST FLAT concept into a new generation. It is thoughtfully designed to create a less bypass environment by gently sealing against the OREA interior walls. This prevents air channels from forming and keeps coffee particles from settling in fluted or wavy surfaces. The result is a calm, even, and more controlled extraction from start to finish.
Low Bypass Approach for Greater Precision
The OREA FLAT 2 introduces a fresh structure that makes SIBARIST’s low bypass design even more effective. It supports a low airflow flat bed that allows for a low bypass brew. This added stability brings more evenness and makes your brews easier to repeat with confidence. The filter is simple to use and slips naturally into your workflow, allowing a smoother brewing experience.
FAST Technology for a Clean, Steady Flow
The OREA FLAT 2 is made with FAST Specialty Coffee Filter technology, which helps water move through the coffee bed quickly and evenly. It maintains a more consistent drawdown without depending on air channels. This creates a smooth and predictable extraction that highlights clarity and sweetness in the cup.

Created for baristas, competition brewers, and thoughtful home enthusiasts, the FLAT 2 brings a new level of consistency, efficiency, and precision to your pour over ritual. It is made to support brews that feel steady, expressive, and deeply satisfying.
The selection of materials and Sibarist's manufacturing process are focused on achieving the highest possible quality over any other factor, while always respecting process sustainability.
The FAST line is composed of a mixture of abaca fiber from plantations in Ecuador and the Philippines (where the product consumed is replanted every year to then be harvested, offering a sustainable process, with batch control and chain of custody), cellulose fiber from European pine plantations (FSC and PEFC) and organic plant-based (non-fossil) polylactic acid.
The main component, abaca fiber, is finer and more porous than other fibers, giving FAST paper good permeability (leading to a higher extraction speed), while offering great tensile and tearing strength in wet conditions, bringing structure and resistance to the composition, with a low substance (less paper). Additionally, the fibers are pulp made from non-wood fibers. This facilitates clean in-plant processing, essential for eliminating the presence of external flavors in the cup and for offering a high-quality filter, while it can also be processed in a more sustainable way.
