The Fish Pro X is Timemore's most refined electric pour-over kettle to date, built around a new sensor-and-algorithm platform called temp X that gives baristas and home brewers something specialty coffee has been quietly waiting for: water that behaves the same way every single time.
Set your target temperature in 0.5°C increments anywhere from 40°C to 98°C. Hit Hold. The kettle locks on and stays there — within ±0.5°C — regardless of water level, voltage swings, or what the room is doing. No drift between brews, no surprise overshoot when you only heat a small charge, no recalibrating your recipe because the kettle decided otherwise. This is the kind of stability that lets you isolate variables and actually trust your dial-in.
A 1350W element heats fast, but power isn't fixed. The firmware reads water volume and ambient conditions in real time and modulates output to reach temperature efficiently without blowing past it. You get speed when the kettle is full and finesse when it's not.
The new spout delivers a controlled 28 g/s flow — slightly tempered from the previous Fish Pro's 31 g/s, deliberately tuned for precision. A steady, narrow stream feeds the bloom and pulse pours; lean the kettle further and the spout opens up enough volume for a confident center pour. Built for the kind of slow, deliberate pouring that brings clarity out of light roasts.

Water doesn't boil at 100°C everywhere. As elevation climbs, atmospheric pressure drops, and the actual boiling point falls with it — roughly 1°C lower for every ~300m of altitude. By the time you're brewing in Denver, water boils around 95°C. In Mexico City, closer to 93°C. In Bogotá or Quito, lower still.
A standard variable-temperature kettle doesn't know any of this. Set it to 100°C and it will keep dumping power into water that's already boiling, because its sensor sees a number that hasn't been hit yet. The result: a rolling, sputtering boil, water blasting through the lid vents, energy wasted, and a kettle that never shuts off cleanly.
The Fish Pro X solves this by detecting the real local boiling point rather than chasing a fixed target. Its sensors and algorithms identify when water has actually reached its phase change for your environment, then cut heating at that exact point. No overboil. No riot. No need to manually adjust your top-end temperature when you travel between sea level and the mountains, or when you move a café from the coast inland.
For competition prep at altitude, traveling baristas, and anyone brewing above ~1,000m, this is the feature that quietly does the most work.
Controls live on the Grooveboard — a refined touch-slider panel paired with new + / − keys for incremental adjustments, plus a dedicated Hold Temp button that jumps to 100°C in one press. Long-press the +/− keys for rapid scrolling. No menus, no fumbling — just a tactile interface designed to disappear into the workflow.
The iconic cutaway handle returns, now with a water-resistant wooden thumb rest. The geometry is balanced for steady, low-fatigue pouring through long brewing sessions, and the wood grip stays comfortable in the hand whether you're dialing in at home or running a station at the bar.
