The B3 FLAT filter shape provides a brewing bed that promotes even extraction of the coffee particles, high uniformity turbulence and full access to the coffee bed. The B3 rigidness produce a minimum contact surface with the dripper and provides a fast extraction, but its material thickness and low porosity provides sweeter and clean cups, avoiding bypass during the brewing process.

The FLAT is the unique and original non-fluted flat-bottomed filter for coffee drippers, designed and patentedĀ by SIBARIST. A COMPLETE FIT - ELIMINATING BYPASS
The air flow between the filter and the brewer is eliminated by the flat paperās adhesion to the dripper walls when wet, thereby removing the ābypassā that can cause astringency in the cup.
The FLAT is very sensitive to dripper geometries and properties since once it is wet, the filter stitches to the dripper walls, eliminating the bypass effect and the air circulation through the filter. The filter CONE FAST eliminates the air gaps created between the waves of classic flat bed filter which ones produce the bypass effect, the FLAT FAST eliminates any air circulation between the filter and the dripper. The FAST Specialty Coffee paper provide enough permeability to provide a fast and excellent flow rate without these extra air channels. In addition, provides a characteristically clean taste and silky mouthfeel that is free of paper flavor.

The selection of materials and Sibarist's manufacturing process are focused on achieving the highest possible quality over any other factor, while always respecting process sustainability.
The FAST line is composed of a mixture of abaca fiber from plantations in Ecuador and the Philippines (where the product consumed is replanted every year to then be harvested, offering a sustainable process, with batch control and chain of custody), cellulose fiber from European pine plantations (FSC and PEFC) and organic plant-based (non-fossil) polylactic acid.
The main component, abaca fiber, is finer and more porous than other fibers, giving FAST paper good permeability (leading to a higher extraction speed), while offering great tensile and tearing strength in wet conditions, bringing structure and resistance to the composition, with a low substance (less paper). Additionally, the fibers are pulp made from non-wood fibers. This facilitates clean in-plant processing, essential for eliminating the presence of external flavors in the cup and for offering a high-quality filter, while it can also be processed in a more sustainable way.

Handcrafted in Toki City, Gifu Prefecture, the ceramic heartland of Japan, the ORIGAMI Small Ceramic Dripper carries the same Mino-yaki porcelain tradition as its larger counterpart: a craft four to five hundred years old, practiced today by only a few dozen artisans. In your hands it is a brewer. In theirs it is a continuation of something much older.
The 20-fold interior works with both conical and wave style filters, giving you the freedom to brew to the cup you want, not the equipment you have. Conical filters encourage faster airflow and a brighter extraction. Wave filters settle the flow, producing something fuller and rounder. The porcelain holds heat steadily through both.
Mino-yaki is the ceramic tradition of the Toki area in Gifu Prefecture, a region long celebrated in Japan for its pottery and washi paper. The techniques used to produce ORIGAMI Drippers are the same ones that have shaped ceramics in this region for generations, refined over centuries and carried forward by the artisans who remain.
The ORIGAMI Dripper was designed by the founder of Trunk Coffee in collaboration with these makers. The result is a brewer shaped by both the culture it comes from and the demands of specialty coffee. It has been used by World Brewers Cup competitors and sits equally well on a competition table or a kitchen counter.
The 20-fold interior of theĀ ORIGAMI Dripper SmallĀ does two things well. With a conical filter, the folds create airflow channels between the filter and the dripper wall, encouraging faster, more even extraction. With a wave filter, the flat bed geometry changes the brew dynamic entirely, slowing flow rate and producing a fuller, rounder cup. One dripper, two distinct approaches.
