About La Danta – The Competition Coffee
Sourced from the highlands of Cajamarca, Peru, La Danta is a communal lot produced near San Ignacio and Jaén, regions renowned for their breathtaking Andean landscapes and long-standing coffee traditions. Named after the Andean tapir, an endangered mountain-dwelling herbivore, this coffee reflects the care and biodiversity of its origin.
While Cajamarca is now Peru’s largest coffee-producing region, the farmers contributing to La Danta have deep roots in the land, with many inheriting their farms from previous generations. These young producers are innovating by planting new varieties, refining fermentation and drying techniques, and adopting more sustainable practices using organic byproducts from their farms.
La Danta is a fully washed coffee, fermented for 25 - 40 hours in sealed bags or open-air tanks, depending on each farm’s climate. After careful washing, the coffee is dried on raised beds for 15–20 days, reaching a final moisture content of 10–11 percent.
The result is a cup that’s remarkably clean, sweet, and balanced, with layered notes of stone fruit, berries, and a subtle florality - a true showcase of thoughtful cultivation and meticulous processing.
