Interview with Carlos Escobar

Meet Carlos Escobar: Colombia's Brewers Cup Champion, Roasting at Origin

We're thrilled to introduce our partnership with Carlos Escobar of DIFFERENTE Coffee, the newly crowned 2026 Colombian Brewers Cup Champion.

Carlos is the son of a Colombian coffee farmer, and he spent 12 years in Australia. There he won the 2020 Australian Brewers Cup and went on to place 4th at the 2021 World Brewers Cup in Milan. He then returned to Colombia with one idea: roast the country's best lots where they are grown, instead of exporting them as green coffee. That idea became DIFFERENTE. Each coffee Carlos selects is roasted in Colombia, close to the farm that produced it.

Since coming home, he has built one of the most remarkable competition records in Colombian coffee:

  • 2020 Australian Brewers Cup Champion
  • 4th place, 2021 World Brewers Cup (Milan)
  • 2024 Colombian Brewers Cup Champion, with the HydroHoney process he co-created with producer Jhoan Vergara
  • 3rd place, 2025 World Brewers Cup (Jakarta), Colombia's first-ever World Brewers Cup finalist and its best result in the competition's history
  • 2026 Colombian Brewers Cup Champion, with a Celestra from Jhoan Vergara's farm Las Flores in Huila. Carlos will represent Colombia at the 2027 World Brewers Cup, hosted in Colombia.

We bought a selection of 10 coffees from Carlos for this collection. With every bag, you're supporting Colombian coffee producers through a difficult period.

We sat down with Carlos to talk about coming home, roasting at origin, and why DIFFERENTE doesn't print tasting notes.

You spent 12 years in Australia and won the Australian Brewers Cup there. What brought you back to Colombia?

I spent around 12 years in Australia working in the specialty coffee industry, and those years completely transformed my understanding of what coffee could be. I had the opportunity to work with incredible people, learn from some of the best professionals in the industry, and eventually represent Australia at the World Brewers Cup.

But something always stayed in the back of my mind. I'm Colombian. I grew up surrounded by coffee, and my father has been a coffee producer for over 35 years. Yet it took moving to the other side of the world for me to truly understand how extraordinary Colombian coffee could be.

In Australia, I saw how the world's best Colombian coffees were being celebrated, roasted, and enjoyed thousands of kilometers away from where they were produced. And I kept asking myself: why can't we do this in Colombia?

Eventually, I decided to come home and build something that could challenge that idea. That's how DIFFERENTE was born. I wanted to bring everything I had learned internationally back to my country and prove that some of the world's most extraordinary coffees could be roasted, presented, and enjoyed right here, at origin.

Why was it important to you to roast Colombia's best lots in Colombia, instead of exporting them as green coffee?

Because I believe Colombia deserves to experience the very best of what it produces.

For decades, Colombia has been recognized as one of the world's greatest coffee-producing countries. But traditionally, many of our most extraordinary coffees have been exported green, and the final transformation happens somewhere else. I wanted to challenge that model.

Why should someone in Tokyo, Sydney, or Copenhagen have access to an extraordinary Colombian coffee while people living just a few kilometers from the farm might never have the opportunity to taste it?

At DIFFERENTE, we believe roasting at origin is about much more than geography. It's about connecting the entire journey, from the producer and the farm to the roasting process and the final cup. It's about building knowledge, creating value, and showing that Colombia can be recognized not only for growing exceptional coffee but also for roasting and presenting it at the highest international level.

And there's another important element: freshness. For us, freshness starts at harvest, not at roasting. Being close to the farms lets us work directly with producers, understand their coffees, and bring them to our customers without unnecessary steps along the way.

We don't want to compete with the world's best roasters by trying to become another version of them. We want to show the world something DIFFERENTE.

You and Jhoan Vergara created the HydroHoney process together. How did that idea start, and what was it like to win the 2024 Colombian Brewers Cup with it?

This coffee means so much more to me than a competition result. Jhoan Vergara is not only one of the most talented producers I've ever worked with, but also someone who has become a very close friend.

When we started preparing for the Colombian Brewers Cup in 2024, we didn't want to simply select an exceptional coffee. We wanted to create something together. That's how HydroHoney started.

We experimented with combining freshly harvested Sidra cherries with cherries that had already undergone fermentation. Both were then depulped together and dried using a honey-style process in dehumidifiers. The idea was to explore how two different stages of fermentation and fruit development could interact within the same variety. We developed it together, combining his experience as a producer with my perspective as a competitor and coffee professional.

Winning the Colombian Brewers Cup with that coffee was an incredible feeling. But looking back, the most valuable thing wasn't the trophy. It was the relationship we built along the way. Competitions have given me incredible opportunities, but friendships like the one I have with Jhoan are probably the greatest prize they've ever given me. And the fact that people around the world can now experience a coffee we created together makes it even more special.

DIFFERENTE doesn't give tasting notes. What do you hope people do or feel the first time they taste one of your coffees?

I hope they feel curious. That's probably the most important thing.

At DIFFERENTE, we deliberately decided not to provide specific tasting notes because we believe coffee is an incredibly subjective experience. What tastes like peach to me might remind someone else of mango, flowers, or even a childhood memory. Neither person is wrong. We all experience flavor through our own memories, cultures, and experiences.

When a coffee bag tells you that you're supposed to taste strawberry, jasmine, and chocolate, sometimes you spend the entire experience searching for those flavors instead of simply enjoying what's in front of you. We wanted to remove that expectation. Instead, we describe the character, intensity, and feeling of each coffee, giving people the freedom to discover their own experience.

Sometimes people taste our coffees and say, "I didn't even know coffee could taste like this!" For me, that's one of the best compliments we can receive. We don't want people to agree with our tasting notes. We want them to discover something they didn't know was possible.

How do you choose the producers you work with, and what makes a lot "DIFFERENTE"?

For us, it always starts with the people. Colombia has an extraordinary number of talented coffee producers, but we're particularly interested in those who are curious, innovative, and willing to challenge traditional ideas. We love working with producers who aren't afraid to experiment, explore unusual varieties, or question how coffee has traditionally been processed.

But it's not just about finding the most unusual coffee. It's about building relationships. Some of the producers we work with have become close friends, and those relationships let us learn from each other, experiment together, and develop coffees that might not exist otherwise.

When selecting a coffee for DIFFERENTE, I always ask myself one question: does this coffee offer an experience that someone might not expect from Colombian coffee?

That doesn't mean it needs to be heavily fermented or extremely intense. Sometimes the most extraordinary coffee is a beautifully produced traditional washed Geisha, where the variety and the agricultural work speak for themselves. Other times, it's an experimental natural that completely challenges your perception of what coffee can taste like. We love both.

What matters is that every coffee has something worth discovering. We don't believe coffee needs to be better or worse than something else to be special. It just needs to be DIFFERENTE.

Looking ahead to the 2027 World Brewers Cup:
“Next year, Carlos will compete for Colombia on home soil at the 2027 World Brewers Cup. Until then, the best way to cheer him on is with a cup in hand.”
